A Powerful antioxidant - Lycopene
Lycopene is a naturally occurring phytochemical and powerful antioxidant. It belongs to carotenoid pigment class which gives fruits and vegetables the red color. It is found in tomatoes, papaya, water melon, red chillies, apricot, red cabbage, pink guavas, strawberry, pink and red grape fruit. Cooked tomatoes are excellent source of lycopene. It is the most predominant carotenoid in the human plasma present naturally in great amounts than beta-carotene and other dietary carotenoids. Like other carotenes, lycopene does not get converted into vitamin A.
